‘No tin foil’ rosemary and lemon salmon August 9, 2010

…with roasted veg and bean salad. So many vital components to mention, so little title space…
I wasn’t intending on creating something for the blog, but an amazing lunch just snuck up on me and I felt the need to record it. I had no tin foil and wanted to roast some salmon to eat in salads this week. Being ever so slightly lazy I decided I’d find a way around the problem of making sure the salmon didn’t dry out in the oven, or stick to the tin.

1. Put oil in a pan into the oven to heat (approx 200 degrees, fan oven)

2. When hot, add a layer of really thinly sliced potato (I used sweet potato) to the bottom of the pan, it’s only really required underneath where the fish will sit, any thin slices outside of that will burn but you could fill the pan with lots more veggies if you wanted to.

3. Put the salmon on top, with thin gaps between fillets, sea salt, black pepper and a good sprinkling of fresh rosemary (or your herb of choice), a single layer of thinly sliced lemon straight on top, and a layer of sliced red pepper on top of that. The quantities of each is really down to taste, just make sure that there is a good layer around the fish to stop it drying out.

4. Cook for 30 minutes, and whilst it’s in the oven make a salad. Mine was gem lettuce, red and yellow baby tomatoes, and a mixture of beans in a creamy salad dressing which I layered the salmon onto when I got it out of the oven.

 

Hummingbird Bakery Awakening! May 25, 2010

I have long been a fan of baking. I don’t think there’s anything more relaxing (well at least when everything is going right-those who have seen me when things are going wrong would disagree!) Thankfully I also work with people who appreciate cake (nearly) as much as I do. Each week on Friday our office stops completely at 10.30am to gather at one end of the office for tea and cake. We have a rota and each week two members of the team bake and bring in cake. This is, understandably, my favourite part of the working week. Last week I was treated to the MOST AMAZING lemon cupcakes from the Hummingbird Bakery Cookbook (http://hummingbirdbakery.com/more/the-cookbook/).

I heard of The Hummingbird Bakery a few years ago thanks to an American friend of mine (thanks Celeste) but somehow I never got around to picking up the Cookbook. That is until last Friday. After tasting the wonderfully light, fluffy and ‘zesty’ cupcakes at cake-time I knew that I could no longer live without this book! Keep reading about lemon cupcakes…

 

Baking challenge – the results so far… May 23, 2010

No one could say I didn’t have a plan. The sun was out and as soon as baking was over I was going to the beach so I wanted to get everything done in the morning, but Jamie said cold cake absorbs the mixture better so honey and pistachio would be made first, to cool while I made muffins, then onto topping both of them. Then off to the beach. Best laid plans and all that…

The honey and pistachio cake mixture smells AMAZING when you pour it into the tray – Greek yoghurt and lemon and orange zest, fresh fresh fresh. I followed the recipe to the word (very unlike me which I think is why baking has gone awry in the past) and the cake looks great fresh out of the oven. Keep reading about cake and muffins…
